Here’s the situation: It’s summer. It’s scorchingly hot outside, the sun is beating down, the A/C seems to be broken, and you just can’t stop sweating. On top of all this, you still haven’t had your morning cup of coffee yet! What do you do?? Well, if I were you, I’d whip up some of these delicious mocha caramel coffee popsicles (say that five times fast) to prepare yourself for any worst case scenario! I love coffee, but I also love frozen treats, so this recipe is a win-win in my culinary book. I was inspired to make these coffee popsicles after trying a new macchiato drink at my not-so-local coffee shop (think green aprons). The drink combined mocha with caramel sauce, made with coconut milk. It was divine, and I thought to myself – why not try to freeze that flavor? Like they say here in the midwest: “Everything’s better on a stick!”
Ingredients
- Vanilla coconut milk
- Caramel syrup
- Chocolate chips
- A strong cup of coffee, chilled
Directions
1. Make a strong cup of coffee, and set it in the refrigerator to cool down.
2. Mix a cup of coconut milk with a dash of caramel syrup, flavoring to your taste. Grab the popsicle mold, and fill half way with the coconut milk-mixture. Toss in a few chocolate chips, too. Set the mold in the freezer for a half an hour to firm up.
3. Mix caramel syrup into the cold coffee (to taste), and top off the molds with the coffee mixture. Add popsicle sticks, and freeze for 6 hours or overnight.
