Weeknight Meal: How to Make My Favorite Spaghetti Bolognaise

Nothing quite screams comfort food like a big bowl of Spaghetti Bolognaise (French, in Italian it is Bolognese). I know this is dangerous territory to be treading in as everyone’s Mama makes the best, but try keep an open mind!

This recipe is an adaption of a recipe shared by none other than the Godfather of Molecular Gastronomy (don’t worry, none involved here!), Ferran Adrià of El Bulli fame is his cookbook, The Family Meal.

Ingredients
(Serves 4)

  • 3.5 oz butter
  • 16 oz ground beef
  • 2 medium onions (chopped)
  • 2 celery stalks (chopped)
  • 2 large carrots (chopped)
  • 5 Tbsp extra-virgin olive oil
  • 2 Tbsp of tomato paste
  • 1 14.5 oz can  chopped tomatoes
  • 1 box spaghetti spaghetti
  • 1/4 cup Parmesan (grated)
  • Salt
  • Pepper

Step 1:  Over a medium heat add the butter, let it melt, then add the minced beef, fry till browned, around 15mins, season with salt & pepper to taste.

Step 2: To avoid hand dicing the vegetables add them to a blender and blend till finely chopped, in another pan pour in 4 tbsp of olive oil over a low heat and fry the vegetables till softened, about 12mins.

Step 3: Add the fried vegetables to the mince, combine well, then add the chopped tomatoes, tomato paste, season with salt, pepper and the sugar. Simmer for 1 hour.

Step 4: 10 minutes before the sauce is ready bring a pot of water to the boil, add the remaining olive oil, season well with salt and cook as per packet instructions.

Step 5: Plate up each bowl of pasta, adding the sauce and top with Parmesan.
