This week I did a round-up of healthy habits to start in 2014, one of which was to try tackling some home cooking.
I love stir-frys, they're quick to make, packed full of flavor and make for excellent weeknight meals. Since I'm currently growing eggplant in my garden I decided to mix it up a bit with this Thai inspired stir-fry dish.
This dish originates from Genoa and is dead simple to make. In 20 minutes or less you'll have a quick, healthy family meal ready to serve.
Last night I concocted this dish, well I thought I did, till a fellow instagrammer pointed out that in the North Africa it's affectionately known as Shakshuka and is an Israeli staple... go figure!
