Mr. Mod’s Souped Up Bunny Cake

Foodie Fridays have made me feel all Home Ecky. However, it’s Mr. Mod who’s the baker around here. In response to my nagging, he agreed to supervise my attempt at baking by lending me the secret to his souped up German Chocolate Cake recipe. We started with a boxed German Chocolate cake and then turned it all creamy rich and dark chocolate-y. As if that’s not enough, we’ve turbo-texturized the canned coconut pecan icing too.

The bow tie and other details are done with a simple butter cream icing tinted with food coloring. I was shooting for lavender, but we ended up with a preppy looking bunny.

Follow the directions on the cake box except substitute 1/2 of the water with buttermilk and add 1/3 cup of melted dark chocolate chips to the batter.

Beat the batter until smooth.

Pour even amounts into the cake pans. One old, crotchety Home Ec professor (I know, can you believe there was/is such a thing?) used to tell us to slam the pans down on the counter to get the air bubbles to rise to the top and pop. Who knew? Now just follow directions for baking.

You’ll need a large surfact for your cake. I covered a piece of scrap plywood with aluminum foil.

After the cake is cool, remove from the pans and cut one round cake to form the bunny ears and bow tie. You may have to trim one edge of the ears so they fit up against the bunny face. Keep the bow tie separate from the head.

Now microwave your canned coconut/pecan icing so it’s soft but not melted. I used two cans.

To pump up the taste of canned icing, add 1 cup more of coconut and 1 cup more of pecans.

You can adjust this to your taste.

Ice the head and ears, leaving a little indentation in the center of the ears for pink icing.

Whip up some butter cream icing. Add food coloring to small portions of the icing so you’ll have the colors you need. Use the Sandra Lee method of spooning it down into the plastic bag and cutting off one tiny corner. Use your colors as you want, adding detail and outlines. Then, jazz up your serving tray (board) and add some color coordinated M & M’s along the edges for fun.
