Icy Cold Havana Mojito Pops

Oh yum! Frozen, fruity, adult popsicles, “Please sir, may I have some more?”  Havana bartender, Felix Parra generously shared his favorite summer adult popsicle recipes in Diablomag.com. It might just be the right weekend to test out his Tangerine Rum Pop, Watermelon Rum Pop or, the Havana Mojito Popsicle. Get the party started with a big, icy tub o’ cocktail pops. To get the Mojito Pops started follow his recipe…Yields: 6 Popsicles

Prep Time: 15 Minutes

Freeze: 8 Hours

2 oz. Bacardi Light Rum

3 oz. Fresh Lime Juice

3 oz. Simple Syrup*

2 1/2 Cups Lemon Lime Soda (Sprite or Sierra Mist)

12 Fresh Mint Leaves

3 Cups Ice Cubes

Combine ingredients in a blender with the ice. Puree all ingredients until the mixture is smooth and slushy. Pour into molds, add popsicle sticks, and freeze for 8 hours.

*Simple Syrup 

Makes 1/2 cup

1/2 cup sugar

1/2 cup water

Bring water to a boil, remove from heat. Add sugar and whisk until all sugar has dissolved. The mixture should be clear in color. Bring to room temperature.
