Knock Off Whole Foods’ Secret Avocado Lime Dressing

Earlier in the week I was waiting for the nice lady at Whole Foods to round me up some of their private Avocado Lime salad dressing. After tasting it, I searched on the shelves for a bottled up version to no avail. It’s not that they don’t disclose the ingredients, but sensing that I am absolutely NOT a foodie, she patiently told me how I could whip up the yummy, fresh dressing at home. She had that pitying look on her face like people who explain some simple idea to you and then (as if you have a severe comprehension problem)ask “Does that make sense?” Here it is in all of it’s deliciousness…One peeled avocado

1 1/4-1/2 cup water

1/4 cup silken tofu

3T fresh squeezed lime juice

2-3 T cilantro (if you love it)

2-3 sprigs of mint leaf

2 T honey (this isn’t in the Whole Foods dressing)

1 T jalepeno (I forgot to buy a jalepeno for this batch and I’m guessing on the amount)

salt and pepper to taste

Throw it all in a food processor and give it a whirl, adding more water if necessary and tasting as you go.

Take note: Even though I actually was a real Home Ec major, I tend to hang out in my basement studio/shop while Mr. Mod cooks his brains out in the kitchen. Since I now have a format on Curbly to blog about food, maybe he’ll step aside and let me show him a thing or two.
