Since many of us can't make it to these festivals of food, here are some recipes to help you enjoy the state fair experience at home.
How To: Pie Pops.
By ChrisjobMy recent visit to the State Fair has taught me two very important new concepts: first, everything is better in mini (mini rabbits, mini cheesecake); and second, all foods are better on a stick.

And, oh buddy, do these Pie Pops capitalize on both. "Scoochmaroo says 'These little beauties can be assembled with pre-made ingredients or from scratch. I used this pie crust recipe and the following filling to utilize fruit in season at the time:

Food for thought: Microwave cooking
By Ken HoytThe idea of cooking with radio waves is well over 50 years old. Sadly most us, myself included, really don't understand how to use a microwave oven for much more than heating coffee. Personally I like the idea of using the microwave, it saves power and it doesn't heat up the kitchen.
A bit more knowledge has been made available with through a few articles in the New York Times:

A tuna salad by any other name...
By Ken HoytEric Ripert is quite likely the best looking chef in existence (What's worse? I interviewed him once and he looks great in person. as well). He's also a super-talented and very successful.
Because he's French he gets to call his version of tuna salad by the name, Tuna Rillette. To be fair rillette translates to plank in French, yet in the culinary world it most often refers to a meat paste.
