A suggestion for dealing with "gingerbread spread" -- after baking, let the gingerbread cool slightly. Then take your pizza cutter or a knife and true up the shapes. We use this to cut out openings like windows or the skylight that the kids thought Santa needed for our chimney-less gingerbread house.

I tried to make a gingerbread house modeled after Case Study House #22 last year, but I got frustrated and just ate it. I tried using real gingerbread and baking it in customized shapes, but it spread and settled in the oven and my corners never lined up.
Tasted good, though.

Ok, so I saw this and loved it! I went to a friend's where they were making Gingerbread houses, but I didn't have the pictures for the inspiration. Here's what I made trying to go from memory. Kinda crappy, but I liked it.
