I used Minwax's Olde Maple Satin Polyshade finish when I redid my coffeetable a couple of years ago. I've got some pictures of the table in various stages of the refinishing job posted over at my site. I found the finish easy to work with, though it's probably still too light a color for your dining room. Maybe Minwax's Antique or Royal Walnut? You can view the colors of Minwax's finishes on their website but I'd recommend going to your local home center (e.g. Home Depot and/or Lowe's) as most will have sample pieces of wood with the various finishes which will give you a better idea of what the finished look like.
