DIY: Your Own Breakfast at Wimbledon, American Style

Curbly's not a food site and I'm not a cook, but Wimbledon ends in a few hours. I've been glued to the t.v. for the entire fortnight. If my man, Roger Federer wins, he will have broken Pete Sampras' all time record. If our American boy, Andy Roddick wins, well, I just like his spirit, hard work and humor. So it's really win/win here this morning. (Although I secretly think Federer should win and get that behind him) As an homage and tribute to both of them, Wimbledon, The Fourth of July and long, wonderful summer days, Mr. Mod invented his own special, extremely delicious Strawberries and Cream Cheese Cake.  Last week he used black raspberries we picked from our side yard, but last night, for the photo shoot, he used good old Georgia peaches. 

Ingredients:

yellow cake mix

1/3 cup oil

3 eggs

1 1/3 nonfat milk

1 box of instant vanilla pudding (small box)

Cream Cheese Icing

2 -3 t. vanilla

1 8 oz. cream cheese, softened

1/2 stick butter, softened

2 1/2 to 3 cups powdered sugar

Topping:

1 1 lb. strawberries, cored and sliced

5 peeled and sliced peaches

Bake cake, let cool

Mix cream cheese, butter, vanilla with mixer and slowly mix in powdered sugar until you get the right peaks

Place cake on a large cake platter, slather on icing in the middle, add the second layer and ice the top if that

Now, lovingly add the beautiful strawberries on top, around the bottom, add the peaches and if you have the black raspberries, sprinkle them all around to look pretty.

The pudding makes this a deliciously moist cake. You could even cut back on fat and calories by making angel food cake, but this is so much better.
