Looking for experience and advice in building interior stackstone wall

Over the Christmas holidays I'm trying to undertake a project to build an interior stone wall at a home in Austin, Texas. I'm not sure where to start, what to buy, where to buy and who to hire to get it done if I can't do it myself. I've attached a photo of the look I'm trying to go for, but it's from a hotel wall in Madrid, Spain!These are my questions if anyone has a possible answer:1.
