This one of my favourite, ‘on the table in 15 minutes’ meals, inspired by one of Jamie Oliver’s recipes. The garlic beans are a perfect compliment to the salty pork and crunch of the blanched broccoli. For a extra bite add in some fresh chili when cooking the beans.
Ingredients
Serves 4
- 14oz broccoli (cut into florets)
- 4 x 7oz thick pork chops
- 2 garlic cloves (chopped)
- 2 deseeded red chilies (sliced) – optional
- 2 x 15oz tins of cannellini beans
- 1 lemon
- olive oil
- salt
- pepper
Step 1: Drizzle your pork chops with a bit of oil and season them with salt and pepper. Place the chops in a hot griddle pan turning 2 minutes a side for 10 minutes, until juicy and cooked through.
Step 2: Place a separate saucepan over a medium heat, add a spot of oil and cook the garlic for a minute and add the drained cannelini beans (and chilies if you are using them) and any fat from the griddle pan.
Step 3: Fill a saucepan with boiling water, season with salt and add the broccoli and blanch for 2-3 minutes, drain and allow them to steam.
Step 4: Plate up the beans, broccoli and serve with a pork chop.
